  • Chocolate & Dairy: 200 g high-quality dark chocolate (70% cocoa) finely chopped, 120 ml heavy cream, 25 g unsalted butter room temperature
  • Coating: 3 tbsp unsweetened cocoa powder (Optional) 2 tbsp finely chopped nuts shredded coconut or powdered sugar

Step 1:
Place the chopped chocolate in a medium heatproof bowl.
Step 2:
In a small saucepan heat the cream over medium heat until just simmering (do not boil).

Pour the hot cream over the chocolate. Let sit for 2 minutes to melt then gently stir until smooth and glossy.
Step 4:
Add the butter and stir until fully incorporated and the mixture is silky.
Step 5:
Cover the bowl and refrigerate for 1–2 hours or until the mixture is firm enough to scoop.
Step 6:
Using a teaspoon or melon baller scoop out small portions and roll quickly between your palms to form balls.
Step 7:
Roll the truffles in cocoa powder or your choice of coating.
Step 8:
Place on a parchment-lined tray and refrigerate until ready to serve.
